This dish is very simple and quick, but the flavors are complex and delicious. The cold tofu is refreshing. The dressing is sweet, sour and spicy. The nuts and shallots give it a wonderful crunch and savoriness. It’s a great way to start a meal or it can be a quick light snack.
- 1 pound tofu sliced 1/2" pieces
- 1 teaspoon sesame oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon sherry
- 1 1/2 teaspoon hot bean paste
- 1/2 teaspoon sugar
- 1 scallion chopped thinly
- chopped cashews
- fried shallots
Combine oil, vinegar, sherry, bean paste, sugar and scallions and stir until sugar dissolves.
Pour dressing over tofu and let it marinate for a few minutes.
Top with cashews and shallots.
